Spicy Watermelon Salad with Feta Mint & Apple Cider Vinegar

 

Watermelon season is in and we buy loads of it ! The kids like to eat it, I like to smoothie it and this time I wanted to try something different so made a watermelon salad. I spiked it with apple cider vinegar and it gave it a zing ! I added the vinegar because I wanted to lower the glycemic index ( GI ) of the watermelon. Watermelon is generally considered high GI, so it’s not really a very good fruit for diabetics.  Spike  it with vinegar and it is magically transformed into a lower GI fruit due to the effect of the vinegar. Bonus : It tasted great too. The vinegar actually brought out the flavor and enhanced the sweetness of the watermelon. You can use any flavored vinegar or plain vinegar too.  I added some mint, green peppers and red onion for  flavor. Cumin adds to the flavor and gives it a spicy touch. I topped it off with  some feta cheese for protein. This makes it a nicely balanced low GI ‘diabetic friendly’ salad that anyone can eat. Mmmm…. so easy and delish, I have to make some more soon 🙂 !

 

 

Watermelon power !

Watermelon is packed with lycopene that might lower your sunburn risk. It’s almost like eating sunscreen :)  Lycopene is a colorful carotenoid that may reduce the risk of heart disease and a range of cancers, mainly prostate. It is the same Lycopene  that offers a Sun Protection Factor because of the high carotenoid  content.  In order to get the benefit of this you will have to drink one smoothie or eat 2 cups of watermelon/Day !  Apart from lycopene, watermelon is also rich in  Vitamins A & C  and is packed with hydrating nourishing fluids ! Watermelon Salad with Feta Mint & Apple Cider Vinegar

Yield: 4 servings

Serving Size: 1 cup

This cool refreshing minty watermelon salad is spiked with apple cider vinegar to lower the glycemic index (GI) making it diabetic friendly !

Ingredients

  • 4 cups cubed watermelon
  • 1 red onion sliced
  • 1 green pepper sliced
  • 1/2 cup mint finely chopped
  • 1/4 cup apple cider vinegar
  • 2 tsp extra virgin olive oil
  • 4 ounces feta cheese
  • 1/2 tsp salt
  • 1/2 tsp cumin powder

Instructions

  1. Carve and cut watermelon in cubes or balls using a melon baller
  2. Slather 1/4 cup of apple cider vinegar and olive oil on watermelon chunks
  3. Add chopped mint, sliced green pepper and thinly sliced onion
  4. Mix salt and cumin powder together and add to the above mixture
  5. Let the salad mixture sit in the refrigerator for at-least an hour to let the flavors mingle
  6. Add crumbled feta cheese just before serving
