Caribbean Warm Spice Chicken with Paprika Ginger & Cinnamon #SundaySupper

 

My  Sunday Supper team is doing a special event this week. We are  featuring recipes by Katie Workman author of ” 100 Recipes Every Mom Needs in Her Back Pocket “.  This is  a fabulous book filled with healthy delish recipes that are kid friendly and savvy enough for the grown ups. The theme for this event is ” portable dishes”.  I looked through the recipe  book which I was fortunate to receive and loved it. Easy, simple practical recipes for busy moms and cooking dads 🙂  While flipping through the book  the chapter on spice rubs for chicken and meats caught my eye. Katie Workman has shared with us  many ‘easy to make’  spice rubs that you can make ahead of time and store for when you want to make the dish. I love that ! I chose the warm spice rub which has a Caribbean flavor to it ! It had a blend of cinnamon, paprika,  cayenne pepper ginger and kosher salt. Rub this on chicken with some lemon and olive oil and you’re in ‘ Chicken Heaven’  It tasted spicy moist and smells heavenly ! Proof : My kid asked me if I was baking Cinnamon Buns 🙂 I probably took too many pics, but I couldn’t help myself ! And Yes !! This dish is portable and would taste great eaten plain by itself or served on a bed of chickpea rice salad as seen in the pictures ! 

 

 

 

 

 

 

Caribbean Warm Spice Chicken with Paprika Ginger & Cinnamon

Yield: 10 pieces

Serving Size: 1 piece

This warm spice chicken is laced with cinnamon and has a heady aroma. Eat it low carb with a green salad or serve with a side of rice !

Ingredients

  • 10 boneless chicken thighs
  • 1 tbsp paprika
  • 1 tbsp cinnamon
  • 1 tbsp cayenne pepper
  • 1 tbsp ginger powder or 1 tbsps ginger paste
  • 1 tsp kosher salt
  • 2 tsp lemon juice
  • 2 tsp olive oil

Instructions

  1. Wash chicken and towel dry to remove moisture
  2. Mix Olive oil and lemon juice and smear over chicken
  3. Mix all dry spices together and rub into chicken liberally
  4. Marinate in the fridge for a few hours or overnight
  5. Bake at 350 degrees for 35- 45 minutes till done. ( This may take longer if you are cooking a whole chicken)
  6. Serve hot and enjoy !!!
  7. Tip : Double or triple the quantities of spice mix and store in an airtight container for future use.

  • Love the gorgeous looking chicken!!The spice rub sounds really good with the cinnamon and cayenne!Totally my kind of food 🙂

  • I love making chicken with a spice rub because it’s easy to make, throw in the oven, then concentrate on other things. I feel warm already reading about it haha

    Since I didn’t get the book, I’m trying to win it! My fav chicken dinner is what I’m making today – chicken wings! Buffalo and probably some kind of Asian sauce.

  • Wow, you did a fantastic job with this recipe. The chicken looks perfectly cooked. Although I don’t eat chicken myself (I’m a pescetarian), I do make it sometimes for my son. He would absolutely love this chicken recipe. All of your photos look so, so appetizing. Great choice from the Mom 100 Cookbook!

  • This chicken recipe looks great, I am wondering a bit about the cinnamon and how the hubs will take it LOL but I am looking forward to giving it a try. My favorite chicken recipe is one I sort of made up. I take the chicken pieces and wash them then place them in a zip bag. In a food processor I add five or six cloves of garlic, one bunch of cilantro, zest and juice of three limes, salt, pepper, cumin, olive oil, and a little water. I process this into what looks like a dressing consistency and then pour it over the chicken. This is also wonderful for steak. I like to use the boneless skinless chicken breasts or tenders, but in truth it is the absolute best with legs and thighs which I let set in the fridge over night before grilling 😉 Thank you for sharing with us today and for the lovely giveaway opportunity.

  • Hi Sue,

    I added this chicken recipe to my recipe box. Love the spices!! We eat chicken at least four nights a week. My favorite is stir fry, any combo so long as it has chicken. Hubby on the other hand will eat oven fried chicken every night I agree to make it for him!

    Wish I would have had the time for this #SundaySupper. All the dishes from the cookbook look absolutely fabulous!

  • I love to marinate chicken tenders in olive oil, garlic and lemon juice, I grill a bunch at one time and eat them various ways throughout the week.

  • I normally end up cooking over the weekend, so that we’ll have quick fixes for the week or I resort to simple, quick meals that I can throw together as soon as I get home from work. Main Dish Recipes: Caribbean Warm Spice Chicken with Cinnamon Ginger & Paprika, And that was really good.

  • Wow…. I noticed all the replies were it looks great but not actually trying it. I love all those spices and I like heat. This is not kid friendly. I did a double take on the amount of cayenne in this. I cooked it. My husband said it smelled like I was cooking dessert. The heat says your not! I may try again but gear way back on the cinnamon and cayenne. Way too much of those.
