Healthy Creamy Caramel Apple Parfait with Greek Yogurt #SundaySupper

 

Ever walked into Wendy’s and had their creamy caramel parfait. It’s delish !! Sadly at  400 plus calories / parfait it is not a dessert the kids or myself can indulge it often. Seeing how the kids loved it and wanted to stop by Wendy’s every time we passed by, I tried out a healthier lower calorie version of it at home and it became a big hit with my family. My Sunday Supper team is doing a ” Kids in the Kitchen ”  theme this week and I thought I would that would be  a nice chance to share my kid friendly healthy Caramel Apple Parfait. Getting kids to help in the kitchen is an extremely important life lesson and skill you are teaching them ! Not to mention it’s fun and creates precious memories . In this dessert, the caramel sauce is made with agave nectar, cream and butter. I used the Land O Lakes olive oil butter with sea salt. This rich but reasonably healthy caramel sauce is smothered over carmelized apples and layered with greek yogurt ! I love using greek yogurt in recipes and desserts. The rich creamy texture of greek yogurt turns any recipe into a healthy creamy creation. Top this off with some whipped cream and an apple chip for a delish creamy parfait that is bursting with calcium and protein.  Since I used agave nectar for the caramel sauce I would call this diabetic friendly. It  is also half the calories of the Wendy’s version! 

 

 

 

Getting the Kids involved

Older kids can help to stir the caramel sauce and carmelize the apples and kids of any age can put the parfait together. Have a parfait party and have the kids layer their own parfaits !! It’s fun and you don’t have to stop from a second helping of this healthy calcium packed dessert !

 

Caramel Apple Parfaits with Greek Yogurt

Serves 2
Dietary Diabetic
Meal type Dessert, Snack
Misc Child Friendly, Serve Cold

Ingredients

  • 1 cup Greek Yogurt
  • 1 Small Apple (chopped)
  • 1 cup Agave Nectar
  • 1/4 cup Heavy Whipping Cream
  • 2 tablespoons Butter

Directions

Put 1 cup agave nectar and 1 tbsp butter and whipping cream in a pan and slow cook for 10 minutes till mixture thickens for a rich, creamy caramel sauce.
Chop apples into small pieces. Heat 1 tbsp butter and lightly caramelize apples till lightly browned.
Layer greek yogurt with caramel and apples in a glass and top with whipped cream . Add a slice of apple pr an apple chip to decorate
