Chunky Chicken Bean Spinach Soup Spiked With Coconut Oil

 

 

Soup is all year round food for me ! Give me a soup and salad and I can eat my way through the summer.  This  soup is a family favorite which I make  at least  once / week just because it’s so easy, the family loves it and its super healthy.  Chicken chunks cooked with veggies, beans and fresh spinach!  Spike it with some coconut oil and you have a delicately flavored coconut chicken soup brimming with flavor and fiber. I use canellini beans for this soup because they are mildly flavored and take on the flavor of the soup.  Chickpeas make a good substitute.  I used canned beans, but you can use fresh beans that have  been soaked overnight. If using canned, rinse rinse and rinse again.  Rinsing takes away excess sodium, and the stuff that produces flatulence.  I like to cut down sodium in my soup so I used a salt free ‘Mrs Dash’ which also lends great flavor to the soup. You can use herbs and spices instead of Mrs Dash though! It’s always a good idea to cut down on sodium in cooking. I used fresh carrots, celery and corn but you can use any veggies. Add the spinach in the last 5 minutes of cooking to keep the fresh green color and add a distinct flavor to the soup.  Sometimes I also add a little whole grain pasta  since the kids love it, plus it also makes it a more complete dish. Serve hot with garlic bread or dinner rolls, a salad and some fruit for a simple but sumptuous meal !

 

Nutrition wise : This soup packs a powerful punch of protein. It also full of fiber courtesy of the beans and veggies. The coconut oil adds some healthy fat and flavor to the soup!

 

Chunky Chicken Bean Spinach Soup Spiked with Coconut Oil

Serves 6-8

Ingredients

  • 4 chicken breasts (( make about 3 -4 cups boneless chicken chunks))
  • 1 onion (chopped)
  • 1 cup corn
  • 3 carrots (sliced)
  • 3 cups spinach
  • 1/2 cup cilantro (chopped)
  • 1/2 cup mint (chopped)
  • 1 can cannellini beans (rinsed)
  • 3 pieces Garlic (crushed)
  • 1 tablespoon pepper
  • 1 teaspoon sea salt
  • 1 tablespoon salt free seasoning like Mrs Dash (or increase the salt to taste and add some herbs)
  • 1 teaspoon oregano
  • 3 stalks celery (sliced )
  • 1-2 tablespoon coconut oil

Note

Substitute the cannellini beans with chickpeas or lima beans if you wish. Add some whole grain pasta when you add the chicken to make this a one pot meal.

Directions

Wash and slice carrots, celery, cilantro, mint and onions. Rinse beans well.
Cut chicken into 1/2 inch chunks. You should have about 3-4 cups chicken chunks.
Boil 5 cups water. Add chicken to water along with salt and seasonings when it boils and cook for 10 minutes.
Add veggies, mint and cilantro and cook for another 10 minutes.
Add fresh spinach and simmer for 5 -7 minutes till spinach wilts into the soup.
Add a scoop of coconut oil and simmer for 2-3 minutes and take off fire.
Serve hot with garlic bread or rolls !!!

    • Have to do color you know 😉 coconut oil in this soup added so much flavor you must try it. I bought a huge tub of coconut oil from vitacost and am slowly working my way through it ! So far no complaints at home yet !
