Sparkling Light Kiwi Apple Ginger Lemonade

 

I love to mix flavors & make crazy concoctions. I think I even confess to that on my Twitter Avi. My family thinks it’s totally crazy to mix diet coke and grape juice but I think it tastes great ! Occasionally when I mix flavors I get  approval from my family ( they actually drink it )and then I know it’s a recipe I can safely share. This experiment turned out quite delish ! A light lemonade with so much flavor it doesn’t need sugar. I have been juicing apples a lot lately. We just happen to have a ton of apples since my kids generously picked about 14 lbs of apples at the farm last weekend. I find fresh apple juice  too sweet and I usually like to water it down with seltzer water. Makes me feel I am drinking a fruity soda. This time I added an over ripe kiwi and lemon to it. It gave it a zip. I added some grated ginger and woo hoo ! It was perfect. My kids are not crazy about  ginger, so skipped it for them.  Lemonade is usually high in sugar. One of the reasons I make my own low sugared lemonades in the summer which are fruity and full of flavor. This one is a winner. Light and refreshing with just a little kick from the kiwi and ginger. I won’t say anymore. You have to try it to believe it 🙂 You can use apple cider instead of fresh apple juice. It works pretty good ! 

 

Nutrition Wise !

Kiwi is a magical fruit packed with more vitamin C than an equivalent amount of orange. It also has a good amount of pottasium and the tiny black seeds adds a burst of fiber. Add the goodness of apple juice and lemon and you have a pottasium packed Vitamin C monster. Ginger is my favorite spice and I have a whole post about it

I like to just crush my kiwi in and watch it floating around 🙂 ! 

 

 

Kiwi Apple Ginger lemonade

Serves 2
Dietary Diabetic, Gluten Free, Vegan, Vegetarian
Meal type Beverage
Misc Child Friendly, Pre-preparable, Serve Cold

Ingredients

  • 1/4 cup Apple juice (juice from one apple)
  • 1 Kiwi (peeled)
  • 2 teaspoons lemon juice
  • 1/2 teaspoon ginger (grated fine)
  • 10fl oz seltzer water or sparkling water (unflavored)

Note

Use apple cider in place of fresh apple juice if desired. Add some fresh mint to add some extra flavor. Enjoy this guilt free low calorie lemonade which only has 40 calories and loads of good stuff !

Directions

Peel Kiwi, grate ginger, juice an apple
Blend everything together or just mash the kiwi into the apple juice.
Mix with 10 ounces seltzer water to make two servings
Serve cool !

  • Hi we made our first home made lemonade while on holiday in Greece. During the summer. I was surprised it came out pretty good. Yours looks a far way ahead I love the sound of the kiwi in it. So definatly going to try it.

  • That’s my fresh, new drink for the summer sorted! I might even be a little cheeky and add a splash of white rum. I’m sure that might go against the nutritional value of the lemonade but as long as we keep it away from the kids 😛
