Sticky creamy salted caramel apples made with a coconut cream caramel sauce are a treat I can eat every day! Lately my family has been addicted to the caramel apples at Cold stone Creamery. We buy one of those giant size apples, cut it up and share! Not too bad for a family treat.  When my Sunday Supper team decided to do a fall foods theme I had to make salted caramel apples. Given my current obsession with coconut, I decided to make a vegan caramel sauce using coconut cream. It turned out to be quite easy. Cook some coconut cream or heavy coconut milk with a mix of coconut sugar and brown sugar. Add some sea salt and  just a twinge of cayenne and I had yummy savory salted caramel sauce. I was not sure if I would get the consistency I wanted with just coconut sugar so I decided to do half and half. I love coconut sugar which is a healthier sweetener with a low Glycemic Index!  I also added a tsp of corn flour to get a smooth thick sauce without adding too much sugar.  A healthier caramel sauce. Then just dunk some crisp green apples into the sauce and I had the freshest salted caramel apples I had ever eaten!  They were so good. I rolled half the apple in some crushed almond to give it a nice crunch. Keeping half the salted caramel apple plain ensures everyone in my family (the non nut lovers) are happy! You can skip the cayenne, but if it’s a slightly spicy touch you’re craving add it. It adds flavor and actually brings out the sweetness of the coconut cream salted caramel apple. Well I am glad I mastered the art of making salted caramel apples so I don’t have to drive 40 minutes every time me, my husband or the kids crave one! I would call this a reasonable healthy dessert ;)!! Added bonus of home made: you can make the caramel coating thin or double dip to make it thick.  I like a think coating of caramel, but my kids and husband like it thick so ” made to order” it is !!

Coconut Cream Salted Caramel Apples

Ingredients

  • 4 green apples
  • 1 can coconut cream or heavy coconut milk from a can
  • 1/2 cup coconut sugar
  • 1/4 cup brown sugar
  • 1 Tsp vanilla essence
  • 1/4 Tsp sea salt flakes
  • a pinchcayenne (optional)
  • 1/2 cup almonds
  • 4 sticks
  • 1 Tsp corn flour (optional)

Note

Skip the cayenne if you wish. Use ready made caramel chips to make a quick sauce.

Directions

wash green apples and stick a wooden stick, wooden kebab skewer or ice cream stick inside
Whisk together coconut cream, sugar and cook over medium heat stirring occasionally till mixture is reduced and the sauce starts to thickly coat the spoon. This should take about 20 - 25 minutes. Add some corn flour if the sauce seems very thin.
Add sea salt, vanilla essence, cayenne and stir well another 2 minutes.
When mixture coats the spoon, take off the fire. Let it sit for about 2 - minutes. Dip the apples in the mixture and coat them evenly
Crush nuts coarsely. Roll apples in nut mixture.
Refrigerate a few minutes before eating.
