Savory Chickpea Banana Pepper Fritters #SundaySupper

Savory banana pepper fritter batter fried with chickpea flour! This is one of those times when fried food is totally acceptable in my opinion. You bite into a banana pepper that is crisp on the outside and soft on the inside and you feel you’re in food paradise. This dish is also called baji in India and is a common street food sold on street corners. As a young girl growing up in India, I remember letting my nose guide me to the most delectable street food ever and recreating it here at home was pure delight! This recipe is gluten free and fondly dedicated to my friend  TR Crumbley who passed away from cancer earlier this year. My Sunday Supper family is dedicating this whole series of gluten free recipes to TR. Earlier this year when I heard that TR passed away I was sad and as part of my grieving process I wrote this post which I hope you will read.

As for my recipe it is very simple and easy to make. You make a batter with chickpea flour also known as besan, readily available at Indian stores and health food stores.  You spice up the batter with chili and salt. You dip the banana peppers into the batter and shallow fry on each side.  Drain the peppers on paper towels and dig in! Hope you like this recipe which is a hometown favorite.
