Tender Peppery Caramelized Onion Steak Takes 15 minutes In A Pressure Cooker

Caramelized Onion Steak with plenty of garlic and pepper cooked up tender in just 15 minutes in my pressure pot.   As a family we love steak but it’s more a summer thing fresh off the grill. During winter I try to make tender steak using my George Foreman Grill or a bake method, but it is not the same and my family grumbles that it is not as tender. So, I kind of gave up on it until I got my pressure pot.

I just got this pressure pot 2 days back second hand but new for me and I was excited to try it out. I had an instapot which I purchased last Thanksgiving but (don’t ask) It doesn’t work anymore! Well a pressure pot is a kind of instapot and a glorified pressure cooker, so this recipe can be made using any of those gadgets.  I am kind of thrifty when it comes to meat shopping, so I chose what was on sale which was Chuck in bone steak.  I Slathered some marinade ( I used McCormick’s steak seasoning but if you want a made from scratch mix you can try these recipes from a foodie friend of mine ). Steak marinated all day and then I mechanically tenderized the steak. Very important step if you want tender steak.  Mechanically tenderizing steak is just pounding it with a mallet or hammer and breaking down the tendons and fibers prior to cooking. I had a wooden pounder from a small gadget I use to pound my spices and my youngest had a field day with it as she pounded the steak.  You can get a proper mechanical meat tenderizer  if you wish.  You can also use a commercial  meat tenderizer powder or paste like  my green papaya tenderizer paste.

I seared the steak on a pan to brown it, caramelized onion and layered it in my pressure pot.  I put one layer of caramelized onion, followed by steak and topped it off with another layer of onion and crushed garlic. I poured a mixture of  stock ( well I used bone broth)  and A1 steak sauce over it and pressure cooked it.  Again if you need a custom steak sauce, check out this post. It too just 15 minutes to cook up some tender, moist flavorful steak which even my husband who is my worst critic approved of.  I had to dry it out in a skillet a little bit and that just made it juicier!  So yeah, now that I have found a fool proof method to make tender steak without the grill, I will be making it more often in the winter too.  If you want some juicy steak just break out your instapot, pressure pot or pressure cooker and cook up some.

Caramelized Onion Steak

Serves 4

Ingredients

  • 3-4 Lbs Bone In chuck Steak (About 4 medium sized steak)
  • 2 Large onion (sliced)
  • 4 Tsp Steak Seasoning
  • 1 Tbsp chili flakes
  • 1 Whole garlic
  • 4 Tbsp Olive oil
  • 1 cup broth
  • 2 Tbsp Steak sauce

Note

You may  need to adjust the salt in the  recipe if you're not using a standard steak seasoning.

Directions

Mix Olive oil with steak seasoning and crushed pepper and smear on steaks. Marinade in fridge for few hours
Use a mallet or hammer to pound the meat
Sear the steak for 1 minute on each side
Caramelize onion till brown . Peel garlic and crush coarsely
Layer the pressure cooker with half the caramelized onion. Place steak on top. Top with rest of the onion and crushed garlic
Mix 1 cup broth with 2 tbsp of steak sauce and pour over the steak mixture
Close the pressure cooker or instapot and set it for 15 minutes.
After steam has been let out transfer steaks to a pan and cook on high few minutes till you get the right consistency.
