Beer Battered Spiced Sweet Potato Lentil Fritters

Ingredients

  • 2 Sweet potatoes (scrubbed and sliced)
  • 2 cups Lentil flour (or besan )
  • 1/2 cup Cornflour
  • 1/2 teaspoon baking soda (or baking powder)
  • 1 cup beer
  • 2 cups oil (for frying)
  • 1/2 teaspoon curicumin or turmeric (optional)
  • 1/2 teaspoon paprika
  • 1/2 teaspoon cayenne pepper (or chili powder)
  • 1/2 teaspoon salt

Note

Use a mix of whole grain flour and pancake flour if you don't have lentil flour. Omit the beer, use water to mix the batter and make this Gluten Free !

Directions

Scrub sweet potatoes and slice thin
Mix 2 cups lentil flour with cornflour, baking powder.spices and beer to make a smooth batter. It should be the consistency of pancake batter.
Heat oil. Dip sweet potato slices into batter and deep -fry in hot oil till it gets golden brown. It cooks very quickly. Drain on paper towels
Serve with a mint dip or your favorite dip !
