Bok Choy Salad

Ingredients
- 4 Stalks baby bok choy
- 2 persimmon fruit (skinned and sliced)
- 2 Banana Pepper (Sliced)
- 1 Tbsp sesame seeds (lightly toasted)
- 1/4 cup orange juice (or juice from 1 orange)
- 1 Tsp ginger (grated)
- 2 Tsp sesame oil
Note
Substitute the banana peppers for any pepper !
Directions
Chop leaves off the bok choy and slice the stem into small bits till the end | |
Add sliced persimmon and sliced red pepper to the greens | |
Mix sesame oil, grated ginger, toasted sesame seeds and orange juice well till nicely mixed. | |
Mix into the salad and enjoy your crisp bok choy salad ! |
