Chipotle Black Bean & Corn Salsa

Ingredients

  • 4 cups Tomatoes (chopped)
  • 1 cup Black Beans (washed and drained)
  • 1 cup Corn (cooked or roasted)
  • 1/2 cup Lemon juice
  • 1 Small Red Onion (chopped fine)
  • 1/2 cup Cilantro (finely chopped)
  • 1/2 cup Mint (finely chopped)
  • 1/2 teaspoon cumin powder
  • 2 Dry Chipotle chillies (crushed into small flakes)
  • 1 teaspoon Salt (salt to taste)
  • 1 teaspoon Salt substitute (like Mrs Dash)

Note

Substitute chipotle chili for any dry chili or jalapeno .

Directions

Chop tomatoes, cilantro, mint and onion fine
Rinse black beans and corn. Add to tomato mixture
Cook or roast corn till cooked. Add to above mixture.
Finely chop or coarsely grind chipotle chilli in a motar pestle. Add to salas along with salt and cumin powder
Add lemon juice and mix well
Serve with tortilla chips or a side for meats !
