Chipotle Black Bean & Corn Salsa

Ingredients
- 4 cups Tomatoes (chopped)
- 1 cup Black Beans (washed and drained)
- 1 cup Corn (cooked or roasted)
- 1/2 cup Lemon juice
- 1 Small Red Onion (chopped fine)
- 1/2 cup Cilantro (finely chopped)
- 1/2 cup Mint (finely chopped)
- 1/2 teaspoon cumin powder
- 2 Dry Chipotle chillies (crushed into small flakes)
- 1 teaspoon Salt (salt to taste)
- 1 teaspoon Salt substitute (like Mrs Dash)
Note
Substitute chipotle chili for any dry chili or jalapeno .
Directions
Chop tomatoes, cilantro, mint and onion fine | |
Rinse black beans and corn. Add to tomato mixture | |
Cook or roast corn till cooked. Add to above mixture. | |
Finely chop or coarsely grind chipotle chilli in a motar pestle. Add to salas along with salt and cumin powder | |
Add lemon juice and mix well | |
Serve with tortilla chips or a side for meats ! |
