Coconut Shrimp Curry

Ingredients
- 1lb shrimp (devined and cleaned)
- 1 Large onion (diced)
- 2 tomatoes (diced)
- 1 Tsp ginger paste (or grated ginger)
- 1 Tsp garlic paste (or grated garlic)
- 1 Tsp cumin powder
- 1/2 Tsp chili powder
- 1/2 Tsp turmeric
- 1 Tsp coriander powder
- 1 Tsp garam masala
- 2 bell peppers (cut lengthwise)
- 1 Tbs coconut oil
- 1 cup coconut milk
- 1/2 cup cilantro (chopped)
- 1 Tsp salt
Note
Skip all the dry spice ingredients except garam masala if using ready made curry powder.
Directions
Heat oil, add onions and saute for 3 minutes. Add ginger garlic paste and saute for 1 minute. | |
Add all the dry spices except garam masala and cook for 2 minutes. Add chopped tomatoes and cook about 3-4 minutes till the oil floats on top. | |
Add salt and cleaned shrimp and simmer for about 10 minutes. Add coconut milk, garam masala and fresh cilantro, simmer for 1 minute and take off the fire. |
