Coconut Shrimp Curry

Ingredients

  • 1lb shrimp (devined and cleaned)
  • 1 Large onion (diced)
  • 2 tomatoes (diced)
  • 1 Tsp ginger paste (or grated ginger)
  • 1 Tsp garlic paste (or grated garlic)
  • 1 Tsp cumin powder
  • 1/2 Tsp chili powder
  • 1/2 Tsp turmeric
  • 1 Tsp coriander powder
  • 1 Tsp garam masala
  • 2 bell peppers (cut lengthwise)
  • 1 Tbs coconut oil
  • 1 cup coconut milk
  • 1/2 cup cilantro (chopped)
  • 1 Tsp salt

Note

Skip all the dry spice ingredients except garam masala  if using ready made curry powder.

Directions

Heat oil, add onions and saute for 3 minutes. Add ginger garlic paste and saute for 1 minute.
Add all the dry spices except garam masala and cook for 2 minutes. Add chopped tomatoes and cook about 3-4 minutes till the oil floats on top.
Add salt and cleaned shrimp and simmer for about 10 minutes. Add coconut milk, garam masala and fresh cilantro, simmer for 1 minute and take off the fire.
