Dark Chocolate Pomegranate Mousse
Ingredients
- 1 Can coconut cream
- 1 Cup ( 8oz) pomegranate juice (divided)
- 1 Pack unflavored gelatin (about 2& 1/2 teaspoons)
- 1 Tbsp brown sugar
- 2 Cups semi sweet dark chocolate chips (or 6 tbsp raw cocoa powder + 3 tbsp of brown sugar)
Directions

| Whip together 1 can of coconut cream with 1 tbsp brown sugar for about 4-5 minutes till thick and creamy. Add 1/2 cup pom juice and blend another 1 minutes. |

| Heat 1/2 cup POM juice till hot and add gelatin and mix well. When cool add to the coconut cream. |

| Melt the chocolate chips in microwave for 2 minutes. Add to the coconut cream. if using cocoa powder and sugar, mix well with 3 -4 tbsp water to make a smooth paste before adding to the coconut cream. |

| Whip everything well together for about 2 minutes and set in containers. |
|
| Refrigerate about 4-6 hrs or till firm. Decorate with whipped coconut cream and pomegranate avrils just before serving. |
