Ingredients

  • 5 baby eggplant (sliced )
  • 1 cup chickpea flour
  • 1/2 Tsp turmeric or curicumin
  • 1/2 Tsp chili or cayenne pepper
  • 1/2 Tsp salt
  • 1 Tsp baking powder
  • 1/2- 1 cup water
  • 1 Cup peanut oil (or vegetable oil)

Directions

Slice eggplant into thin slices.
Mix chickpea flour with turmeric, cayenne pepper, salt, baking powder and enough water to make a smooth paste.
Heat oil. Dip eggplant slices in flour mixture and fry for 1-2 minutes till golden brown. Drain on paper towel.
