Eggplant Fritters
Ingredients
- 5 baby eggplant (sliced )
- 1 cup chickpea flour
- 1/2 Tsp turmeric or curicumin
- 1/2 Tsp chili or cayenne pepper
- 1/2 Tsp salt
- 1 Tsp baking powder
- 1/2- 1 cup water
- 1 Cup peanut oil (or vegetable oil)
Directions

| Slice eggplant into thin slices. |

| Mix chickpea flour with turmeric, cayenne pepper, salt, baking powder and enough water to make a smooth paste. |
|
| Heat oil. Dip eggplant slices in flour mixture and fry for 1-2 minutes till golden brown. Drain on paper towel. |
