Ginger Roast Chicken with Red Wine Plum Sauce
Ingredients
- 4 chicken breast
- 2 teaspoons Ginger paste (or ginger powder)
- 1 teaspoon salt
- 1 teaspoon cumin powder
- 1/2 teaspoon turmeric or curicumin (optional)
- 3 plums (pitted and sliced)
- 8 cherries or grapes (pitted and halved)
- 1/2 teaspoon paprika
- 1/2 teaspoon chili powder or chili flakes
- 3/4 cups red wine
- 1/4 cup orange juice
- 1 heaped teaspoon cornflour
- 1 teaspoon water
- 1/2 onion (finely sliced)
- 1 teaspoon olive oil
Directions

| Smear ginger paste, salt, cumin and turmeric over chicken and bake at 350 for 30 minutes or till evenly roasted and cooked. |

| Saute onion till soft. Add pitted plums, cherries along with wine, paprika and chili and cook covered for 3 -4 minutes till fruit is soft. Add orange juice and cook 1 minute. |

| Mix cornflour with water and add to sauce mix and cook for 2 minutes till it forms a chunky fruity paste. |
|
| Spoon warm sauce over chicken and serve over a bed of brown rice and steamed veggies or salad for a complete meal. Pair with a dry fruity red wine like 2010 Ernst Holler, Blaufrankisch, Burgenland for the perfect meal !!! |
