Ingredients

  • 2lb boneless chicken (cut into small chunks)
  • 1 egg (or 1/ 2 cup egg white)
  • 2 tablespoons corn flour
  • 1 tablespoon flax meal (flax seed ground )
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon curicumin (or turmeric)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

Note

These chunky chicken nuggets give you a boost of protein power without the fillers ! Had a slightly spicy kick to it. Tone down the spice if your kids don't like spice.

Directions

Cut chicken into small chunks.
Mix 2 tablespoon corn flour with 1 tablespoon flax meal. ( make flax meal by griniding 1 & 1/2 tbsp raw flaxseed..
Make a spice mix of cumin, curicumin, salt, pepper garlic powder and smear over chicken.
Add one egg or 1/2 cup egg white and the flax cornflour mixture to the spiced chicken and mix well.
Bake at 350 for 30 - 40 minutes till baked brown. Turn halfway through baking. If frying, drain on a paper towel after frying..
