Gluten Free Quinoa Cookies with Almond and Coconut

Ingredients
- 1 cup cooked quinoa (1/3 cup raw quinoa cooked for 10 mts in 1 cup water)
- 1 cup oats
- 1/2 cup Almond flour
- 3/4 cups Shredded coconut (unsweetened)
- 1 cup Apple sauce
- 1/2 cup almond pieces
Note
Gluten free, vegan and high protein this cookie is diabetic friendly. If you want the quinoa cookie sweeter add some agave nectar.
Directions
Cook 1/3 cup dry quinoa grains in 1 cup water for 10-15 minutes till cooked | |
Mix quinoa with oats, applesauce, almond powder, 1/ 2 cup coconut. Add some coconut milk if too thick. | |
Drop on cookie sheets and decorate with shredded coconut and almonds. Bake at 375 degrees for 15 - 20 minutes till baked. |
