Red Quinoa Stuffed Peppers

Ingredients

  • 4 peppers
  • 1/2 cup raw quinoa
  • 1 cup black beans
  • 1 cup corn kernels
  • 1/2 red onion (chopped)
  • 1 Tsp ginger (diced or grated)
  • 1 Tsp cumin powder
  • 1 Tsp salt
  • 1/2 cup cilantro

Directions

Cook quinoa in 2 cups water for 12-15 minutes till quinoa is soft and cooked
Cut peppers into half and scoop out the inside
Heat oil, add onion, ginger and saute for 2 minutes before adding quinoa, cumin and salt. Add beans, corn and saute for about 5 minutes till spices and herbs are all mixed in
Spray peppers with oil and stuff them with quinoa mixture
Bake at 350 for 30-40 minutes till peppers look and feel roasted. Remove from oven and serve warm.
