Red Quinoa Stuffed Peppers

Ingredients
- 4 peppers
- 1/2 cup raw quinoa
- 1 cup black beans
- 1 cup corn kernels
- 1/2 red onion (chopped)
- 1 Tsp ginger (diced or grated)
- 1 Tsp cumin powder
- 1 Tsp salt
- 1/2 cup cilantro
Directions
Cook quinoa in 2 cups water for 12-15 minutes till quinoa is soft and cooked | |
Cut peppers into half and scoop out the inside | |
Heat oil, add onion, ginger and saute for 2 minutes before adding quinoa, cumin and salt. Add beans, corn and saute for about 5 minutes till spices and herbs are all mixed in | |
Spray peppers with oil and stuff them with quinoa mixture | |
Bake at 350 for 30-40 minutes till peppers look and feel roasted. Remove from oven and serve warm. |
