Ingredients

  • 8oz Salmon (about 1/2 lb)
  • 8 Leaves Butter lettuce (or romaine lettuce)
  • 2 Tsp salt (divided)
  • 1 Tsp pepper
  • 1 Tsp cumin
  • 1 Tsp paprika
  • 1 Tbsp olive oil
  • 1 cup mango (fresh or frozen cut into small pieces)
  • 2 Cups tomatoes (diced)
  • 1 Tbsp cilantro (chopped)
  • 1/4 cup onion (diced)
  • 1 Tbsp lemon juice
  • 8oz Salmon

Directions

Cut salmon into 4 pieces. Mix 1 tsp salt, pepper, cumin, paprika and olive oil together ans smear over the salmon

Roast salmon stove top or by baking at 400 degrees for 10- 15 minutes till cooked.
