Samosas Stuffed With Sweet Potatoes & Peas

Ingredients
- 2 sweet Potaoes
- 2 Large potatoes
- 1 cup peas
- 1 teaspoon chili flakes
- 1 onion (chopped fine)
- 1 teaspoon ginger (grated)
- 1 teaspoon cumin powder
- 1 teaspoon mustard seeds
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 2 cups whole wheat flour
- 2 cups oat flour
Note
If you do not want to make your own dough, use your favorite pastry dough, pizza dough, puff pastry or pie crust.
Directions
Bake or boil potatoes and sweet potatoes. Scoop out flesh. | |
Heat oil. Add mustard seed and wait for them to splutter. Saute finely chopped onion, ginger, chili flakes and cumin for about 2-3 minutes. | |
Add potato, sweet potato to the above mixture and fold in. Add peas and salt. Remove from fire. | |
Mix 2 cups oat flour with 2 cups wheat flour with warm water and knead till it forms a firm dough. knead about 10 minutes and refrigerate for a few hours or overnight. This will help the gluten to form and make it easy to roll. | |
Roll flour into 1/8 inch thickness and use a calzone press to cut circles. You can also make lime size balls and roll each ball into a circle. | |
Stuff a scoop of mixture into one half on the circle and bring the other half over and seal using water. Use a fork and make a nice edge. | |
Bake at 400 degrees for 15 minutes till golden brown | |
