Sweet Kale Salad With Poppy Seed Dressing

Ingredients

  • 4 Cups Kale
  • 1 orange tomato (sliced)
  • 2 cucumbers (washed and sliced)
  • 1 cup Brussels sprouts (shaved or cut into strips)
  • 1 red onion (sliced thin)
  • 2 Tbsp poppy seeds
  • 2 Tbsp pepitas (or sunflower seeds)
  • 2 Tsp poppy seeds
  • 2 Tsp lemon juice
  • 2 Tbsp honey or maple syrup (I used maple syrup)
  • 3/4 cups cream or yogurt (I used coconut cream)

Note

This recipe yields approximately 1 cup of dressing. Use a few tsps for the salad and refrigerate the rest in an air tight container or jar.

Directions

Wash and tear kale into smaller pieces. Wash slice other produce and toss with kale
Mix poppy seeds, maple syrup, lemon juice and coconut cream together ans whisk well until it forms a smooth mixture ( about 1 cup)
Toss dressing with salad and mix well
