Ingredients
- 4 Cups cooked turkey
- 4 Large potatoes
- 1 Small red onion (finely diced)
- 1 cup cilantro (finely chopped)
- 1 Cup mint (finely chopped)
- 1/2 cup basil (finely chopped)
- 2 eggs
- 1 Tbsp ginger (grated or chopped fine)
- 4 Cloves garlic (finely chopped)
- 2 Cups breadcrumbs
- 1 Tsp sea salt
- 1 Tsp pepper
- 1-2 Cups oil (if using the fry in oil method)
Note
Crisp turkey cutlets stuffed with fresh herbs & potatoes make a scrumptious treat ! Bake these cutlets for a healthier treat or fry them and make sure you drain the excess oil on paper towel. Serve with a hot chutney or sauce !
Directions
Mince turkey in a food processor or power blender to get minced turkey | |
Bake or boil potatoes. Peel and remove flesh | |
finely chop fresh herbs, garlic, ginger and onion | |
Mix potatoes, turkey, fresh herbs, ginger, garlic and onion. Add an egg, salt & pepper and mix well to form small patties or cutlets | |
Beat an egg. Lightly coat cutlets in egg mixture and roll in breadcrumbs | |
Fry in hot oil for 3 minutes till brown and drain on a paper towel. You can also bake at 350 for 30 minutes for a healthier cutlet |
