Curried Butternut Squash Soup With Fresh Herbs & Coconut Oil
Spicy Curried butternut squash soup laced with coconut oil makes a warm comforting meal. I have been on a soup spree the last couple of days and yesterday I whipped up a batch of curried butternut squash soup with fresh herbs, spices that had my home smelling all warm and fuzzy! It’s very easy to make and is chockfull of healthy veggies and zesty spices that add a nice kick to it. Part of my problem is : having grown up on spices I find most restaurant or store-bought soups a little bland and then I have to make a spicy version of it. I added some sweet potatoes, peppers, celery, and an apple to the butternut squash. Spices I used were curry powder, cayenne and my favorite curicumin aka turmeric. Some fresh dill, freshly grated garlic and ginger at the end of cooking added a zesty flavor to it! Top this off with a dash of coconut oil and you have a flavorful curried butternut squash soup which takes veggies to a new level. You can roast all the veggies if you want but I just microwaved the lot and pureed it before transferring to the stove. Roasting gives it a unique flavor, but this was one of those days I was craving soup so badly I could not wait.
Nutrition Wise!
Butternut squash has one of the highest concentrations of vitamin A rivaling even potatoes. It is rich in B-complex group of vitamins like folates, riboflavin, niacin, vitamin B-6 (pyridoxine), thiamin, and pantothenic acid. It also has adequate levels of minerals like iron, zinc, copper, calcium, potassium, and phosphorus. Sweet potatoes have a similar profile to butternut squash, so put the two together and you pack a powerful punch of vitamin A. Adding spices like curry powder, turmeric and cayenne increases the antioxidant power of the soup. Ginger, garlic and coconut oil add an antiseptic, antibacterial quality and increase immune function. Lots of goodness in this soup it seems!!
Curried Butternut Squash Soup

Ingredients
- 3 cups butternut squash (peeled, seed removed and cut into chunks)
- 1 cup sweet potao (peeled, seed removed and cut into chunks)
- 1 apple (cut into chunks)
- 2 stalks celery (cut into pieces)
- 1 small onion (chopped)
- 1 cup peppers (chopped ( I used red and yellow))
- 1 tsp curry powder
- 1 tsp turmeric
- 1 tsp cayenne pepper
- 1 tsp salt
- 4 pods garlic
- 1/2 inch ginger
- 1/4 cup dill (chopped)
- 2 tbsp coconut oil
- 2 cups vegetable stock
Directions
| Microwave or cook all the veggies and apple in one cup of veggie stock for 5 -7 minutes till soft | |
| Puree in a blender or food processor till smooth | |
| Heat oil, add spices and cook for 1 minute. Add pureed mixture and salt and cook for 10 minutes. Add fresh dill. Grate ginger and garlic into soup and cook for 2 minutes before you take it off the stove. | |
Okra Shrimp Gumbo With Coconut Oil #SundaySupper
Hearty Okra Shrimp Gumbo with Coconut oil and Veggies is comfort soup to me. I have eaten this at a seafood restaurant and loved all the flavors mingled in this soup. So when my Sunday Supper team decided to do Soup theme I knew I had to make Shrimp Gumbo ! I recreated the soup from memory ( I am usually quite good at guessing spices that have been added to a dish etc). The soup I had was thicker and the tomatoes were blended in, but I prefer chunky tomatoes, so I chopped them instead of pureeing. I tossed up lots of veggies in this shrimp gumbo making it a hearty meal in itself. Lots of fresh okra, tomatoes, celery, peppers and fresh herbs. Okra gives any dish a unique flavor and if you’ve eaten okra, you know what I mean. Well, now that I made it I can honestly say it exceeded my expectation ! Just the aroma when I was cooking it was worth the effort and of course the taste was all that I had imagined. Nutrition Wise !
Shrimp is a low calorie food source of protein.Shrimp are rich in omega- 3 and 6 fatty acids. Okra is a great source of fiber. It is notably high in calcium, potassium and magnesium.. all the bone building nutrients ! Peppers area powerhouse of vitamin C and tomatoes are loaded with lycopene. So much good stuff in this Shrimp Gumbo!
Shrimp Gumbo
Ingredients
- 1lb medium shrimp (cleaned and devined)
- 2 cups okra (chopped)
- 2 cups peppers (chopped)
- 4 large tomatoes (chopped)
- 1 onion (chopped)
- 1 bunch spring onion (chopped)
- 2 stalks celery (chopped)
- 4 cups chicken stock
- 2 tbsp coconut oil
- 1/2 cup dill (chopped)
- 1 tbsp ginger (paste or shredded fine)
- 1 tsp old bay seasoning
- 1/2 tsp cayenne (or chili)
- 2 tsp sea salt
- 1 tsp cumin
Directions
| Heat coconut oil. Saute raw shrimp with all the spices and ginger for about 4 minutes | |
| Add chopped okra and saute another 2 minutes. Add chopped tomatoes, celery, peppers and saute for 2 minutes. | |
| Add chicken stock and fresh dill and simmer for 30 -40 minutes till mixture thickens. | |

Roasted Carrot Ginger Soup With Fresh Carrot Juice & Coconut Oil
Roasted carrot ginger soup with a swirl of fresh carrot juice and a dash of coconut oil is comfort food to me. I love soups all year around, but give me a warm hearty soup in winter and I need nothing else to eat. Roasting veggies or fruit intensifies their flavor and gives soups a hearty earthy taste which tells you the soup is made from scratch. I added some winter squash, an onion and an apple to it. I spiced it with some fresh garlic, pepper, salt and a dash of curicumin. Just before serving I swirled some fresh carrot juice and freshly grated ginger into it and my carrot soup was perfect. And yes! I used a nice scoop of coconut oil to flavor the soup and it added a nice touch to the carrot soup!
Nutrition Wise!
Carrots are chockfull of vitamin a in the form of carotene which is needed for healthy growth and regeneration of skin, hair and nails. Not to mention it is called the eye vitamin. Squash had a lot of fiber and vitamins. Ginger is an antinflamatory, antiseptic and is my person immune boosting weapon for the winter. Carrot Ginger Soup
| Serves | 8-10 |

Ingredients
- 8 medium carrots (cleaned and tops cut off)
- 2 small squash like zuchini
- 1 small onion
- 1 apple
- 1 inch piece ginger
- 1 tsp salt
- 1 tsp pepper
- 1 tsp curicumin or turmeric
- 12 tsp cayenne (optional)
- 2 tbsp coconut oil
- 1/2 cup fresh carrot juice (optional)
- 1 cup vegetable stalk (or water)
- 1 tsp parsley
Directions
| Slice carrots, squash, onion, apple roughly, smear with a little coconut oil and roast at 400 degrees for 30 – 40 minutes. | |
| Puree all the roasted veggies and ginger till smooth. Add some vegetable stalk or water to get it smooth if you wish. | |
| Heat coconut oil, add salt pepper, garlic, curicumin, paprika and cook for 1 minute. Add pureed veggies and veggie stalk or water and cook for about 5-7 minutes on slow heat. | |
| Add coconut oil and cook for 1 minute. Add a swirl of fresh carrot juice and some grated ginger just before serving. Garnish with parsley. | |

Eggplant Fritters With Orange Ginger Salsa #SundaySupper
Tender baby eggplant fritters coated with lentil flour served with a tangy fresh orange ginger salsa makes a high fiber snack and a great appetizer. It’s Super bowl Sunday and my Sunday Supper team is doing a tailgating Super Bowl theme. In all the 17 years I have been here in the Sates, I have watched the Super Bowl with great excitement every year. The ads, the games, the entertainment and the snacks are all a part of Super Bowl. This year I was really excited to see the Washington Redskins come quite close J but they since they did not make it to the finals, I will be rooting for the Baltimore Ravens!! Every year we have a Super Bowl party with friends and this year along with my home-made hummus I will be taking my eggplant fritters with a zesty orange salsa. These eggplant fritters are super easy to make and can be eaten plain or with a sauce or dip. You slice the eggplant, dip it in a chickpeas batter and fry it in peanut oil or a healthy oil of your choice. I have tried baking the fritters, but it’s not the same so this is one of those occasions when frying becomes acceptable. Draining the fritters on paper towels as soon as you make them drains and removes most of the oil. The lentil batter adds a nice crunch and a healthy dose of fiber to the fritter. If you’re an eggplant lover you must try this dish. It is yummy crunchy and will change the way you eat eggplant.
Nutrition Wise!
The elusive eggplant is a favorite of mine. Eggplants are bursting with phytonutrients that act as antioxidants that help to reduce the number of free radicals in the body which damage cells and may contribute to certain diseases, including some cancers and heart diseases. Eggplants are also a good source of dietary fiber, which can help improve cardiovascular and digestive health. Lentil flour adds a nice dose of fiber and protein and curicumin aka turmeric add some antioxidant power.
Eggplant Fritters

Ingredients
- 5 baby eggplant (sliced )
- 1 cup chickpea flour
- 1/2 tsp turmeric or curicumin
- 1/2 tsp chili or cayenne pepper
- 1/2 tsp salt
- 1 tsp baking powder
- 1/2- 1 cup water
- 1 cup peanut oil (or vegetable oil)
Directions
| Slice eggplant into thin slices. | |
| Mix chickpea flour with turmeric, cayenne pepper, salt, baking powder and enough water to make a smooth paste. | |
| Heat oil. Dip eggplant slices in flour mixture and fry for 1-2 minutes till golden brown. Drain on paper towel. | |
Orange Salsa

Ingredients
- 4 tomatoes (chopped)
- 2 oranges (peeled and seed removed)

- 1 tsp ginger (grated or finely chopped)
- 1 tsp salt
Directions
| Pulse or finely chop oranges, tomatoes, cilantro. | |
| Add spices and mix well. Add fresh ginger. | |
