Coconut rice pudding with pineapple & saffron. Good old-fashioned rice pudding with a touch of the tropics.  I really hit jackpot with this dish and it tastes heavenly!! My Sunday Supper team is doing a “Cooking Low and Slow ” theme this week. Mmmm…. all those flavors enhanced by slow cooking!! I decided to make my coconut rice pudding in the slow cooker for this event  and I thought I would add some pineapple to it.  The combination of sweet pineapple with creamy coconut milk was pure magic! It transformed my lovely coconut rice pudding into a gourmet rice pudding! I added a few strands of saffron to it which gave it nice golden glow and added a subtle flavor which enhanced the coconut rice pudding! Topped with some crunchy toasted coconut the pudding was perfect and  guess what: it tastes better the next day when the pineapple and saffron flavors have soaked in. I may try a couple other fruits but I doubt it will taste as good as this pineapple coconut rice pudding !

Pineapple Coconut Rice Pudding
Serves 8-10

Ingredients

  • 1 cup raw rice
  • 4 cups coconut milk
  • 2 cups pineapple (fresh or canned)
  • 1/2 cup brown sugar
  • 1/2 cup coconut cream
  • 1/2 cup shredded coconut (or coconut flakes)
  • 1 tsp coconut oil

Note

Use nut butter instead of coconut cream to get a creamy texture !

Directions

Cut pineapple into small bits or shreds.
Cook pineapple, rice and coconut milk in a slow cooker/crockpot for 4 hours. Check every hour and stir it to ensure it doesn’t stick to the bottom of the pot.
After 4 hours, add sugar, coconut cream , coconut oil and saffron strands and cook another 15 minutes.
Toast coconut flakes on a dry pan till golden brown.
Serve coconut rice pudding hot or cold with a generous serving of toasted coconut.

Coconut Date Chia Pudding Packed With Fiber & Brain Food

Creamy Chia Pudding made with coconut milk and sweetened with dates makes a great post-operative snack. Here’s why: It fills you up with clean fiber and healing omega 3, both essential for post-operative recovery. Last Friday instead of enjoying ‘Family Movie Night’ I was in the ER, struggling with excruciating pain which eventually led to an appendectomy – hence the “pudding all week” diet. When you have surgery, the one thing you DO NOT want to do is to strain your bowel movement since that can complicate the stitches. However, most pain meds and the fact that you did have surgery tend to make you constipated, calling for more fiber. I am not a huge fan of Metamucil, Citruceal etc. and prefer natural fiber. After I got tired of steel-cut oats I turned to chia pudding and now am absolutely hooked on it. Super easy to make: Soak the chia seeds in milk, add some fruit and natural sugar and you have a creamy tapioca type pudding that is a pure pleasure to eat. Chia seeds swell up and become like soft tapioca beads and make a soft, moist pudding. You can add it to smoothies and bubble tea too. I tried chia pudding several ways but my favorite so far is to mix it with coconut milk and dates. Dates sweeten it enough that you don’t need sugar, but you can add a dribble of maple syrup if you want. My kids were eating my chia pudding! It was that yummy and knowing that I am pumping my system and theirs with healthy fiber and omega 3, sure doesn’t hurt. If you’re looking for ways to add more fiber to your diet try chia pudding! Like me, you’ll fall in love with it! Who says healthy can’t be tasty !! Best of all it’s a ‘No Cook’ raw pudding !

 

 

Nutrition Wise!

Chia seeds add a powerful punch to every serving. Just 1 tbsp. had 6 grams of fiber, three grams of protein and about 3 grams of omega 3. Omega 3 is super brain food and has so many health benefits. Impressive huh! It takes just 1 tbsp of chia seeds to make one serving of chia pudding.  Coconut milk has healthy fat that is burned as fuel as soon as it is ingested.  Dates are a powerhouse of iron and fiber.  All in all, a healthy fiber packed Chia pudding that tastes yumm !

Ingredients

  • 1 tbsp chia seeds
  • 1/2 cup coconut milk
  • 4 dates (chopped)
  • 1 tsp maple syrup (optional)
  • 1 tsp coconut flakes (optional)

Directions

Soak chia seeds and chopped dates in coconut milk overnight or for a few hours in the refrigerator
Top with coconut flakes and a drizzle of maple syrup

Tropical Super Fruit Guava Papaya Smoothie Loaded With Digestive Enzymes

Super Fruit guava papaya smoothie loaded with digestive enzymes will transport you right to the tropics. I was on vacation in Chicago last week and I found some guavas. I love guavas!! Grew up eating them off the trees and let me tell you, nothing beats the taste of plucking a raw or ripe guava off a tree and biting into it. I also remember eating them with a little chili sprinkled on them. Mmm delish! Anyway I bought a lot of these babies and after eating some decided to blend the rest  into a smoothie. Teamed with ripe papaya, a little parsley and ginger I got just the taste I was looking for. Sweet and tart with the distinct taste of guava. There’s something magical about blending fruit together and this guava papaya smoothie is proof!  If you can get hold of some guava, try blending it with some papaya and make this super fruit papaya smoothie. You can also get guava puree in the frozen section of your grocery store. Your digestive system will thank you !

 

 

Nutrition Wise!

Guavas are considered a super fruit. Loaded with antioxidants, they boast more Vitamin C than an orange. They are also loaded with fiber, lycopene and Vitamin A. No wonder they are called super fruits. Papaya is loaded with digestive enzymes that are so good for you. Digestive enzymes help our body absorb and utilize nutrients more efficiently. Papaya is also rich in Vitamin A, Vitamin C, fiber, and potassium. All in all a healthy super fruit guava papaya smoothie!

Ingredients

  • 1 cup ripe papaya
  • 2-3 small guavas
  • 1 sprig parsley
  • 1 tsp lemon juice
  • 1/2 tsp ginger
  • 1 tsp brown sugar or stevia or maple syrup (optional)
  • 3-4 ice cubes (optional)

Note

Add a tsp of ground flax seed to get an additional boost of nutrition

Directions

Wash and clean all fruit.
Blend everything together with ice and enjoy
