Hearty Hemp Heart Oats with Flax and Chia #Keto #GrainFree

Who’s up for a nutritious nutty tasting, hot cereal, packed with super foods with all the “comfort food feeling” of oats, but, is low -carb. I mentioned in my previous post that hubby and I are on a low carb stint for sometime and one of the foods we really miss is oats. Steel cut oats cooked with milk and cream topped with berries and nuts is pure comfort food for me, esp on a cold winter day. Now that I created a grain-free oat recipe I can indulge and feel that warm fuzziness creeping over me whenever I eat my hot cereal. Coconut flour, hemp hearts, ground flax meal, chia seeds and sesame seeds join together as the meat of this cereal, adding great texture and some lip smacking flavor. The main ingredients are coconut flour and hemp hearts. If you omit the other stuff it will still be good, but a definite “yes” for the hearts and the flour. I have only recently discovered hemp hearts which is a nutrition powerhouse. I have expounded the nutrition below but let me just say I love these little hearts and plan to use them in more recipes. There is some controversy about whether hemp hearts are a grain or a nut but considering that it has been stripped of most of the fiber and is high in protein and fat, most nutritionists classify it a nut. This recipe is for a plain hot cereal but after you make it, feel free to dress it up any way you want. Add some cinnamon, chocolate, dry fruit, fresh fruit, nuts whatever you want!

Measure out the dry ingredients and dry roast them on a pan. Dry roasting brings back fond memories of kitchen smells that wafted through the house when my mom roasted grams, grains and then sent them off to the mill to grind into a fine powder that she would use to make a healthy warm porridge for us. It was delish and we would add fresh cream (the delicious stuff that floats on top of fresh, creamy milk when boiled) and it was totally yummy. Dry roasting serves for a couple of purposes. It enhances flavor, lessens cooking time and helps “get rid of” the raw flavor. I personally like raw everything. I like my steak rare, eggs half cooked etc., but not everyone does; so if you want to get rid of the raw flavor, dry roast the ingredients. You can roast a larger quantity and store in an airtight container for later use. You can also microwave this mix when you are ready to eat, but I just like cooking stovetop. I like to watch the flavors mix and mingle creating one glorious messy, yummy concoction. Plus, I have more control over the liquid consistency when I cook stove top.

This recipe serves two and you can use 1 and half or two cups liquid to make it. I used two cups, coz I like my hot cereal a little runny, and I usually make it the previous night and refrigerate overnight. This allows for the flavors to mix a little more and the chia seeds soaking up all the extra milk, makes for a nice gooey consistency. I used butter while cooking, but if you would prefer a vegan porridge use coconut oil and coconut cream instead. If you add some extra butter at the end this could perfectly qualify for a keto recipe with all the extra macros from fat.  I tested this cereal on my husband who is my worst critic and he liked it too. That means I passed the “taste test” of making nutrition taste yummy. So now I am happy to share with you my hearty, healthy, uber nutritious hot cereal. Nutrition Wise: Hemp hearts are packed with easily digestible protein and healthy fats, lots of brain boosting omega 3, B vitamins, manganese, magnesium, phosphorus and other good stuff. Flax and chia seeds add more omega 3 and have lignans which protect against cancer. They also have loads of fiber. Add some grain free immune boosting coconut flour and you have a nutrient dense porridge which is  heart healthy and good for you, mind body and soul.

Ingredients

  • 1/2 cup coconut flour
  • 1/3 cup hemp hearts
  • 1/4 cup chia seeds
  • 1/4 cup ground flax seed
  • 1/4 cup sesame seeds
  • 1 Tbsp butter
  • 2 Cups coconut milk
  • 1 Tbsp stevia
  • 1 Tbsp heavy cream

Note

Use any milk of your choice

Use coconut oil and coconut cream instead of butter and heavy cream to make this recipe vegan

Directions

Dry roast all dry ingredients except stevia for 2 minutes till light gold brown
Heat butter, add milk. When milk boils, add all the dry ingredients and stevia and cook on slow for 5 to 7 minutes stirring to prevent bubbles.
Add heavy cream just before eating
