Quinoa Falafel With Parsley & Cilantro #SundaySupper

Quinoa falafel! Chickpea and quinoa mixed with some fresh herbs make a crisp healthy snack. I love falafel, so when my Sunday Supper team decided to do a “Middle Eastern “theme I made my quinoa falafel. Super easy to make this flavor filled patty is crunchy and packed with fiber. The addition of quinoa increases the protein and improves the texture. I added some fresh parsley, cilantro  and the quinoa falafels were perfect!

Quinoa Falafels

Ingredients

  • 2 Cups( 1 can) chickpeas
  • 1/3 cup raw quinoa
  • 1 Pod garlic (chopped)
  • 1 Tsp chili flakes (optional)
  • 1 Tsp cumin
  • 1 Tsp salt
  • 1/2 cup fresh parsley
  • 1/2 cup fresh cilantro
  • oil to fry
  • 1 Tbsp almond flour

Directions

Cook cook quinoa with 1 cup water for about 10 minutes till softly cooked
Mix cooked quinoa with chickpeas, almond flour, herbs and spices and form patties
Deep fry in oil for 2-3 minutes till deep brown.
