Salmon Red Curry

Tender salmon steaks swimming in a pool of spicy red curry sauce! This is a dish I make a lot and its very easy which is why, when people ask for the recipe I say it’s ” very simple” , almost too simple to describe. But I thought putting it on a recipe card is not a bad idea so I can give it to people who ask.  You can use salmon fillet or steaks. I prefer steaks coz I always like fish with bone.  Anyway, you make a red curry sauce by blending some ingredients together and just simmer the fish in the sauce till it gets cooked.  Top it with some cilantro and pour it over some basmati or get some chapatti and wipe the plate clean.  It a good holiday dish seeing it’s red and green :)!  I didn’t get great pictures of it last time I made it but I promise to take a nice picture of it poured over rice the next time I make it and update this post so you can see what it looks like close up! Nutrition Wise: Salmon is a great source of omega 3 and DHA which are the brain building foods.  It also  had a good amount of Vitamin D and B12.  Healthy fats combined with strong anti-inflammatory properties make it a super food.

Salmon Red Curry

Ingredients

  • 1 onion (sliced)
  • 4 Cloves garlic
  • 1 " ginger
  • 3 Tbsp coconut oil
  • 2 -3 Cups crushed tomatoes
  • 1 Tsp chilli powder
  • 1 Tsp cumin powder
  • 3 Lbs salmon steaks or salmon fillet
  • 1 Tsp turmeric
  • 1 Tsp coriander powder
  • 2 Tbsp paprika
  • 1/2 cup cilantro (chopped)
  • 1 Tsp salt
  • 2 Tbsp lemon juice
  • 1 Tbsp garam masala

Note

After the dish is done you can add some cream if you want a creamy fish curry.

You can also use 2 tbsp tandoori masala in place of the all the dry masala.

Directions

Heat 2 tbsp oil, add onion and saute till transparent
Add ginger, garlic, tomatoes and saute another 2 -3 minutes
Throw the stuff from the frying pan into a blender and puree to a smooth paste
Put back on fire. Add dry spices including salt and cook about 5 - 7 minutes till oil floats on top. Add 1 tbsp oil
Gently fold in the salmon pieces and cook on medium heat about 10 - 15 minutes till salmon is cooked. Try not to stir too much as this may break up the salmon.
Toss in cilantro and gently stir in lemon juice. Simmer uncovered on slow heat 5 minutes.

Christmas is almost here and my home is not decorated. My oldest was the one who got everyone excited and busy around the holidays and with her away at her first year in college,  no one wants to decorate until she gets home which is not until the 21st so we will be late. It’s also a little dreary without her during the holidays and I’m not sure how am going to  feel when the second child goes off too. I will probably be hitting my head and wondering  why I didn’t have that third child :)!
