Low Carb Cauliflower Rice Pilaf with Ground Beef & Cabbage

Cauliflower rice pilaf made with riced cauliflower, ground beef and cabbage is a perfectly healthy one pot dish that is delicious and savory! Add some fresh cilantro, pepper and cumin garlic and it is cauliflower heaven! I haven’t blogged in a long time and this week I decided to get back to blogging regularly and what better way to kick start my blogging than to join my Sunday Supper team!  When I heard they were doing a Cauliflower theme I thought I would jump right in with a cauliflower dish of my own!

Cauliflower is a very versatile vegetable and cauliflower rice in particular is one of my favorite forms of cauliflower! I love rice, grew up on it and know about a 50 ways to prepare it! Whether I eat it plain with yogurt or with lentils it’s comfort food to me because it reminds me of my childhood and the years I spent in India! But let’s face it; rice in large quantities is full of carbs and not really good for you especially for the waistline or in more technical terms, the belly! If you were eating it as a side that’s fine but as a main dish frequently it could be a problem especially for those who tend to gain fat on the belly!  Cauliflower rice is a blessing because you can sub all those empty carbs with fiber and vitamins instead. However making cauliflower rice palatable can be a challenge and that’s where I come in. As a dietitian I counsel people on weight loss and eliminating empty carbs is a good way to lose weight. I create recipes to make it easier for them and this cauliflower rice pilaf is one of them. You can make it using just riced cauliflower or, like I did, add some basmati rice to it. That gives it the feeling of eating a rice pilaf but with 1/3 less carbs than a regular rice pilaf! Not bad for a healthy swap! Also well,  my family will only eat it with the basmati rice so yeah I add that in and they don’t even know that there’s a lot of cauliflower rice in there!  With the ground beef, cabbage, cauliflower and basmati rice there’s a whole lot of textures going on which make it very delicious and filling! Never mind that it’s healthy!

You can make your own cauliflower rice by grating fresh cauliflower, processing it in a food processor or buying it at grocery store like I do. Trader Joe’s sells a freshly riced cauliflower bag for under $3. That’s the price I would pay for a fresh cauliflower I just buy it. I use what I need and freeze the rest! It freezes well!
