Warm Spice Raisin Pecan Apple Chutney

Ingredients
- 2lb Apples or 4 meduim (peeled , cored and chopped )
- 1 cup Apple cider vinegar (or any vinegar)
- 1/2 cup Apple cider (or apple juice)
- 1 teaspoon Ginger (ground)
- 1 cup Golden rains
- 1 cup Pecans (roasted)
- 2 Jalopenos (chopped)
- 1 Onion (chopped)
- 1/2 cup Mint (finely chopped)
- 1/2 teaspoon Turmeric
- 1/2 teaspoon Paprika
- 1/2 teaspoon Cayenne pepper (or Chili )
- 1 teaspoon Cinamon
Note
This recipe yields about 8 cups of chutney. This spicy chutney can be used a side with meats, dip with chips or as a sweet and spicy filling for a wrap !
Directions
Peel and core apples. chop into 1 inch pieces. | |
Chop onions and ginger fine | |
Add apples, raisins, ginger and onion to apple cider and apple cider vinegar. Add all dry spices and cook about 20 minutes till nicely cooked. Cook longer for a smooth chutney. Cook less for a chunky chutney. | |
Roast pecans and add to chutney towards end of cooking. | |
Add freshy chopped mint just before serving ! |
