Warm Spice Raisin Pecan Apple Chutney

Ingredients

  • 2lb Apples or 4 meduim (peeled , cored and chopped )
  • 1 cup Apple cider vinegar (or any vinegar)
  • 1/2 cup Apple cider (or apple juice)
  • 1 teaspoon Ginger (ground)
  • 1 cup Golden rains
  • 1 cup Pecans (roasted)
  • 2 Jalopenos (chopped)
  • 1 Onion (chopped)
  • 1/2 cup Mint (finely chopped)
  • 1/2 teaspoon Turmeric
  • 1/2 teaspoon Paprika
  • 1/2 teaspoon Cayenne pepper (or Chili )
  • 1 teaspoon Cinamon

Note

This recipe yields about 8 cups of chutney. This spicy chutney can be used a side with meats, dip with chips or as a sweet and spicy filling for a wrap !

Directions

Peel and core apples. chop into 1 inch pieces.
Chop onions and ginger fine
Add apples, raisins, ginger and onion to apple cider and apple cider vinegar. Add all dry spices and cook about 20 minutes till nicely cooked. Cook longer for a smooth chutney. Cook less for a chunky chutney.
Roast pecans and add to chutney towards end of cooking.
Add freshy chopped mint just before serving !
