Spicy Peanut Sesame Brittle With Honey & Coconut Oil #SundaySupper

 

 

 

Sweet N Spicy peanut honey brittle laced with a tinge of cayenne, made with honey & coconut oil makes a crunchy snack that is chockfull of protein and vitamins. My Sunday supper team is doing a “Culinary Bucket List” theme where we try out something new that has been on our list of things to make. So fun! I jumped right in with something that’s been on my bucket list:  my peanut sesame brittle. I was slightly nervous since I have never made anything like this before, but it turned out great. Peanut sesame brittle is one of those treats that can actually be healthy if it wasn’t for all the refined sugar and corn syrup, the dominant ingredients in most versions. Huge bonus to making it at home is that you can control what you put in it. My version is more wholesome, has half the sugar of the usual version and more nuts. I used a combination of raw brown sugar and raw honey. I also added just a tinge of cayenne and it gave a slight kick. I love the combination of crunchy sweet N spicy! I added sesame seeds and they went really well with the crunchy peanuts. Just one tablespoon of coconut oil added a creamy crunch to it. Big surprise, my husband who never likes sweet stuff was digging into it. I may try adding some cardamom and peanut butter to it the next time I make it.   It was surprisingly easy to make and is the perfect snack for when my sweet tooth kicks in! 

 

 

 

Nutrition Wise! 

Peanuts are a great source of satiating fiber and protein. They are also one of nature’s richest sources of the fat blasting amino acid arginine.  Sesame seeds are busting with vitamin E and iron. They are also high in fiber. Combine these two super foods with a little honey and you have a wholesome sweet treat! 

 

 

 

 

 

 

Peanut Sesame Brittle

Serves 25 pieces
Dietary Gluten Free, Vegan, Vegetarian
Meal type Snack
Misc Child Friendly, Pre-preparable

Ingredients

  • 1 Cup roasted peanuts
  • 1 Cup white same seeds
  • 3/4 cups raw brown sugar
  • 3/4 Cup raw honey
  • 1/4 Cup water
  • 1 Tbsp coconut oil
  • 1/4 Tsp cayenne pepper (optional)
  • 1 Tsp baking powder

Note

Healthy, wholesome version of peanut sesame brittle with a slight kick to it !

Directions

Combine raw sugar, honey, water, cayenne and coconut oil on fire and cook till it reached hard candy stage. You can use a thermometer and cook it till it reaches 290. No thermometer ? Fill a cup with cold water and drip in one drop of syrup into the water. Feel the drop at the bottom of the cup. If it is hard and brittle, it's ready.
When the syrup hits 290, remove from heat. Quickly stir in baking soda and nuts. Combine and stir quickly.
Working quickly , pour the mixture on a greased cookie sheet and spread as thinly as possible.
Cool, let it set about 2 hrs and then break into pieces.
