Egg Curry : Protein Packed Boiled Eggs In Curry Sauce #IndianRecipes Made Easy

 

Savory spicy egg curry – Indian style. Hard-boiled eggs in a savory sauce made of tomatoes and fresh cilantro makes a protein packed egg curry. The incredible edible egg has gotten a very bad rap in last few decades due to its high cholesterol. Chicken eggs are high in cholesterol, and a diet high in cholesterol can contribute to high blood cholesterol levels but as with all foods everything in moderation. Research shows that, contrary to previous belief, moderate consumption of eggs does not have a negative impact on cholesterol and if it’s cholesterol you’re concerned about, skip the yolk and eat the white. All of the cholesterol is in the yolk. Eggs are packed with high quality protein and a host of other good stuff!  This egg curry is an easy dish that is very popular in my home. It’s one of the first dishes I learnt to cook and it’s an easy weeknight meal. Boil the eggs, make a curry with tomatoes, dunk the eggs in and you’re done. Such a neat way to eat a boiled egg, all spiced up!! In my home since we have moderate levels of cholesterol, we have egg white omelets often tapping into the protein power of eggs and when we want to eat whole eggs, we choose this egg curry dish. The cooked yolk (yellow) slips out easily so I sometimes leave that aside and enjoy the white with the curry flavor! Savory spicy egg curry to warm up any meal.

An egg has a score of 100 when it comes to protein! Along with milk, eggs contain the highest biological value (or gold standard) for protein. One egg has only 75 calories but 7 grams of high-quality protein, 5 grams of fat, and 1.6 grams of saturated fat, along with iron, vitamins, minerals, and carotenoids. They are a powerhouse of disease-fighting nutrients like lutein and zeaxanthin. These carotenoids may reduce the risk of age-related macular degeneration, the leading cause of blindness in older adults. Egg Curry

Serves 6
Dietary Diabetic, Gluten Free
Meal type Side Dish

Ingredients

  • 6 eggs
  • 1 Large onion (chopped)
  • 2 Large tomatoes (or 4 small chopped)
  • 1/2 cup cilantro (chopped)
  • 1 Tsp curry powder
  • 1/2 Tsp curicumin or turmeric
  • 1/2 Tsp garam masals
  • 1 Tsp salt
  • 1 Tbsp ginger (paste, ground or shredded)
  • 2 Tbsp olive oil

Note

Boil eggs with a tsp of salt to get an easy peel egg. Salt changes the PH of the water and the shell slides off easily

Directions

Boil eggs. Peel shell and cut into halves
Heat olive oil. Add chopped onions and saute till cooked soft.
Add ground ginger, curry powder, turmeric and cook for 3 minutes. Add chopped tomatoes and cook for about 5 -7 minutes till oil floats on top.
Gently slide in boiled eggs into the gravy and cover with sauce and simmer for about 3 - 5 minutes without stirring. Add fresh chopped cilantro and garam masala. Take off the fire and eat warm.

  • Nice way to use eggs. I make the usual egg salad and stuff, but this looks amazing ! Must try this. Seems simple too. Have all the ingredients at home I think from my last Indian cooking bash ! Glad your’e doing a series Sue. Indian dishes look intimidating, but with a little help. I can make it !
