Persimmon Bok Choy Salad With Sesame Ginger Orange Dressing

 

Bok Choy salad with juicy persimmon and red banana peppers doused with a homemade orange ginger sesame dressing is simple to fix but fancy to serve !  Spring is here and nothing screams more spring to me than Fresh greens and fruit busting with succulent flesh! I received a huge  box of greens yesterday from “Jade Asian Greens” courtesy of my friend and foodie blogger Dorothy Reinhold. I met Dorothy via the Sunday Supper club and I love her clean and healthy approach to creating dishes which you can find here !  Being the kind who likes who handpick produce  I must admit I was a little curious about  greens arriving in a box. When the greens arrived, I was definitely not prepared for the freshness and quality of the greens that came ready to eat, packed in ice to keep them cool.   They were green, super fresh, crisp and tasted like I had picked them off a field. I received so many varieties and I know my family will be enjoying greens for the next few days!! The first kind that caught my eye was baby bok choy! I took a bite and it was so crisp and crunchy I knew I had to make a bok choy salad. Bok Choy is traditionally used for stir fries, but add some into a salad and it’s super healthy and yummy! When you use bok choy in a salad, use the stems too. They have valuable nutrients in them and add a crisp crunch to the salad. I like my leaves whole so I just snipped the leaves off and chopped up the stem. The end part made a crisp flower which made the salad look so pretty! My kids thought I craved the stem 🙂 ! I added some succulent persimmon and some red banana peppers to it and that added  texture and depth to it. If you’ve never eaten persimmon fruit before, you must try it. It’s a delish cross between a tomato and a plum and tastes absolutely delish in a salad. It almost feels like natural fruit jelly and went so well with the bok choy. Add some sharp red peppers to it and you have an exotic bok choy salad. I doused this in my favorite homemade orange ginger sesame salad dressing and it was flavorful as you can get. I’m quite sure I will be making some other stuff with the greens in the next few days, but here’s my Asian inspired nutritious bok choy salad!!

 

Nutrition Wise!

Bok Choy is a significant source of vitamins A, C and K, which are essential antioxidants the body uses to help fight off viruses and colds. One serving of bok choy provides all the essential minerals you need to stay strong and healthy including calcium, potassium and manganese. Because bok choy is loaded with fiber, essential nutrients and is so low in calories, it is a perfect natural diet aid when it comes to losing weight. It can be eaten in large amounts without playing a big role in your calorie intake for the day, and it can be added to virtually any kind of meal. In fact, making a green smoothie that incorporates bok choy is one my list next. Bok Choy is also known as a cancer fighting food because of the antioxidant levels found within it. Some cultures think of this food as a super food. One of the biggest plus points of Persimmon is that it has 6 grams of fiber/ fruit which   is impressive for such a tiny fruit. Like red peppers it is also loaded with vitamin C & A. Sesame seeds add a hearty dose of vitamin E and healthy fat! All in all,  a nutritious bok choy salad indeed!!

Bok Choy Salad

Serves 2-4
Dietary Diabetic, Gluten Free, Vegan, Vegetarian
Meal type Salad, Side Dish
Misc Child Friendly, Gourmet, Pre-preparable, Serve Cold

Ingredients

  • 4 Stalks baby bok choy
  • 2 persimmon fruit (skinned and sliced)
  • 2 Banana Pepper (Sliced)
  • 1 Tbsp sesame seeds (lightly toasted)
  • 1/4 cup orange juice (or juice from 1 orange)
  • 1 Tsp ginger (grated)
  • 2 Tsp sesame oil

Note

Substitute the banana peppers for any pepper !

Directions

Chop leaves off the bok choy and slice the stem into small bits till the end
Add sliced persimmon and sliced red pepper to the greens
Mix sesame oil, grated ginger, toasted sesame seeds and orange juice well till nicely mixed.
Mix into the salad and enjoy your crisp bok choy salad !
