Rustic Roasted Tomato Garlic Soup Loaded With Lycopene

 

Ripe tomatoes roasted, blended with garlic, onion and spiked with coconut oil make a warm spicy rustic tomato soup.  Perfect for that cold day when you are stuck indoors and craving comfort food. The second day of ‘Sandy’ and everyone was craving soup. Tomato soup is always popular in my home, but I usually buy it. I looked at the ripe tomatoes sitting on my kitchen counter and felt them beckoning, calling out to me to turn them into homemade tomato soup. I decided to roast the tomatoes before turning them into puree. Roasting intensifies the flavor in anything and gives tomato soup a whole different flavor. I tossed in some garlic and onion, smeared everything with a dab of coconut oil and roasted/baked them for 40 minutes. After that, I just pureed them, added spices, coconut oil and my home made roasted tomato soup was done ! Easy and It tasted yumm ! I didn’t have garlic bread to go with it, but we just ate it with toast and felt that warm feeling that you only get with home-made tomato soup ! I will never buy canned or packaged tomato soup again. 

 

 

Nutrition Wise !

Tomatoes are loaded with Vitamin C and A. They are also packed with lycopene, an antioxidant that prevents skin damage from ultra-violet (UV) rays and offers protection from skin cancer. Lycopene is also found to be protective of other cancers, especially  prostate, breast and colon cancer. Absorption of lycopene increase in cooked tomatoes. So tomato soup, marinara sauce, ketchup are good sources of this antioxidant.  This vegetable also has Zea-xanthin which  helps protect eyes from “age-related macular disease” (ARMD) in the elderly persons by filtering harmful ultra-violet rays. All the more reason to load up on tomatoes. Garlic has antibacterial, antiviral properties and coconut oil adds a nice boost of healthy fat. All in all, a very healthy dose of nutrients in this tomato soup.

 

 

 

 

Roasted Tomato Soup

Serves 6-8
Dietary Diabetic, Gluten Free, Vegan, Vegetarian
Meal type Appetizer, Soup
Misc Child Friendly, Freezable, Pre-preparable, Serve Hot

Ingredients

  • 4 Large tomatoes
  • 4 Pods garlic
  • 1 onion (sliced)
  • 2 tablespoons coconut oil
  • 1 teaspoon crushed dry red pepper (or chili flakes)
  • 1 teaspoon cumin
  • 1 teaspoon pepper
  • 1 teaspoon paprika
  • 1 teaspoon Mrs Dash (your favorite flavor)
  • 1 teaspoon salt

Note

Mrs Dash is used to lower the need for sodium. If not using Mrs Dash or any other salt free seasoning, add an extra tsp of salt. This rustic roasted tomato soup is the perfect comfort food for a cold day.

Directions

Cut tomatoes in half. Peel garlic. Slice onion . Smear everything with coconut oil and bake at 350 degrees for 40 minutes.
Blend all roasted ingredients to a smooth puree.
Heat on stove. Add spices and 1 tbsp coconut oil and simmer for five minutes.

  • I have made a version of this several times and it is so good. You can roast whatever other vegetables you have sitting around – red peppers, green peppers, etc. They all get pured together; but it will change the color of the soup.
