Cranberry chutney with apricot and almond spiked with paprika, red wine and cayenne has a nice spicy kick to it. My Sunday Supper team is doing a “Gifts from the Kitchen” theme where we all create homemade gifts to give to others. Lovely idea ! Nothing warms the heart more than a personal hand-made gift. Some of the gifts I have treasured over the years are handmade. Gifts from the kitchen are well received because they’re edible 🙂 ! I decided to make a batch of cranberry chutney with fresh cranberries. I love chutney. The mention of chutney makes mouths water for spicy exotic delicacies. However my cranberry chutney -a spicy concoction of fruits with wine, nuts and spices is quite at home with barbecued meats, hamburger, fowl, chops or cold meats. Perfect for the turkey that will be carved at thanksgiving. I made some apple chutney awhile back and it was aromatic and delish. I used almost the same spices for my cranberry chutney and of course it tasted quite different. I added some red wine which enhanced the flavor of the cranberry chutney. I have 2 families and a bachelor cousin visiting for thanksgiving and they are all going home with a jar each. I ended up with 8 jars so, I will give away some more as well. I will save some for our thanksgiving dinner and I can’t wait to see how it tastes with turkey ! Hopefully I will have some left. I am not kidding, it is finger licking good ! Spicy and tangy with just a hint of sweetness. I better find a good spot to hoard it 🙂 !
Nutrition Wise !
Cranberries contain a powerful cocktail of protective phytonutrients (plant chemicals) in the form of flavonoids and phenolic acids that contain protective, disease-preventing properties. They act as antioxidants in the body.Cranberry juice been used for decades for the prevention and treatment of urinary tract infections (UTI). They are said to inhibit bacteria from adhering to the cells that line the bladder. In addition they are high in vitamin c.
Apricots are a very high source of vitamin A that promotes good vision. Vitamin A, a powerful antioxidant, quenches free radical damage to cells and tissues. Free radical damage can injure the eyes’ lenses. They are also a good source of fiber, which has a wealth of benefits including preventing constipation and digestive conditions such as diverticulosis.
Combine the two with some heart healthy red wine and some heart healthy vitamin E and we have a cranberry chutney that is a veritable nutrition powerhouse !
Chutneys like pickles taste better as they age ! The flavors and spices soak into the cranberry chutney. Refrigerate to improve flavor !
