Spicy Meat Ball Curry with Fresh Herbs and Coconut Milk

If you have visited my blog in the last few days you would see that I have not blogged in 3 weeks which is a long considering I had decided to start blogging regularly! Well I had blog issues: a broken theme and new theme not sitting properly etc. Blogger’s nightmare if you ever had one. I struggled with the new theme for more than 2 weeks until a kind person on twitter who fixes broken blogs worked on it and fixed all the kinks  for me. I am so happy because I can now blog again. I also like the look of new blog design and love changing things around to match the season!

I had actually made this recipe a week back and when I posted the picture on FB there were a lot requests for the recipe so it makes sense that I would blog this first. Also, well there have been a lot of meat ball posts floating around with yummy pictures so yeah I felt inspired to blog my own! This is an original recipe and the sauce is a blended sauce. I blend tomatoes, peppers and some other stuff, add my blend of curry spice to it and throw in some coconut milk and it’s altogether delish! You can use this sauce for any kind of meatballs like these vegan meatballs.

Well these are burgers but can be shaped into meatballs :)!

As for my meat balls they are “made from scratch” and I am so proud of them because they are a meal in themselves; stand alone, can be eaten without the sauce. I got some inspiration from a new foodie friend I met on twitter that has all these fabulous tips on their food blog! Not just recipes but interesting facts about what type of potato or mushroom can be used for what dish etc.  Those little inside tips that make you feel your’e watching a cooking show! My current favorite foodie shares their tips on making terrific meat balls and you should visit the blog and here’s the post that inspired my meatballs! This recipe calls for apple sauce which makes meatballs so flavorful. I  also added  fresh herbs, fresh crackled pepper and garlic in my meatballs. I used a combination of pork and beef because I think those make the best meatballs! Tender, flavorful and meaty! Anyways, hope you like my  meatball curry recipe! You can eat it with Indian bread, pita bread or just spooned over rice! Who knows, it may taste good with some zucchini noodles or spaghetti! I haven’t tried that but you can! Coconut Meatball Curry

Ingredients

  • 1lb lean beef
  • 1lb ground pork
  • 1/2 cup applesauce
  • 1/2 cup parsley
  • 1/2 cup cilantro
  • 1/2 cup mint
  • 1/2 cup breadcrumbs (I used gluten free)
  • 2 onions (sliced)
  • 2 tomatoes (chopped)
  • 1 red bell pepper (sliced)
  • 1 yellow bell pepper (sliced)
  • 5 Cloves garlic
  • 1/2 " ginger
  • 2 Tsps chili flakes or crushed flakes
  • 1/2 Tsp turmeric powder
  • 1 Tsp cumin powder
  • 1/2 Tsp garam masala
  • 1 & 1/2 Cups coconut milk (divided)
  • 2 Tsp salt (divided)
  • 1 Tbsp crackled pepper
  • 1 Tsp garlic powder
  • 2 tbsp olive oil
  • 4 Large potatoes (cubed)

Directions

Mix herbs, applesauce, pepper, 1 tsp salt, garlic powder into ground pork and beef and mix well.
Make mid size balls. Microwave balls for 4 minutes turning after 2 min so meatballs are half cooked. Keep aside.
Saute onions for 2 minutes. Add tomatoes, peppers, garlic, ginger and saute another two minutes. Add chilli flakes.
Puree the entire mixture and put back on the stove
Add turmeric powder, cumin powder, salt and garam masala and cook for 5 minutes
Add meatball, potato cubes plus 1 cup coconut milk and pressure cook up-to 1 whistle. ( If cooking stove top just cook about 20 minutes until potato in tender)
Add 1/2 cup coconut milk and some cilantro just before serving
