Quinoa Banana Bread with Flax & Coconut oil

 

Fresh bananas mixed with oatmeal, flax-seed, quinoa, brown sugar  and just a dash of coconut oil makes a nutrient dense quinoa banana bread! Mmm delish, not to mention super healthy too ! Hurricane Sandy has us ( whole family) home today and usually that calls for extra snacks. I had a bunch of bananas threatening to get over ripe. I usually freeze ripe bananas for smoothies, but since I wasn’t sure if the  power was going to get cut off and leave me freezer- less, I decided to bake with it instead.  Although banana bread is a staple in our home I have never added quinoa to it before. I got this idea from my  friend Susan who blogs over at The Wimpy Vegetarian who used quinoa flour in her brownies and they looked and sounded fab ! You must check them out ! I did not have quinoa flour so I decided to cook the quinoa and added it to the bread. I used one cup oat flour and one cup whole oats. I wanted to give it a grainy texture with oats. I also used coconut oil and flax meal.  When the bread came out of the oven it smelled heavenly and was a little heavier than my usual banana bread probably because of the quinoa and whole oats. It tasted fabulous. My family devoured it which had me grinning from ear to ear. They don’t know all the nutritional junk I put in it 😉 ! I have cooked with quinoa before but I have never baked with it and now that my first experiment was a success, I can’t wait to use it other baked goodies ! This bread is also vegan and gluten-free ! 

 

 

A note about quinoa

Quinoa is an ancient grain that is becoming hugely popular especially with vegans and those who eat gluten-free. Quinoa provides all 9 essential amino acids, making it a complete protein. Quinoa is a gluten-free and cholesterol-free whole grain and is almost always organic. It is also high in  fiber. When cooking quinoa  use a proportion of 1 :2 quinoa to water. It swells to four times its size when cooked , so 1/4 cup raw quinoa will give you one cup cooked quinoa.

 

 

Nutrition Wise !

Apart from all the goodness in quinoa , this bread is nutrient dense bursting with healthy fat courtesy of the flax-seed and coconut oil. Flax meal also offers a healthy dose of omega 3 and lignans which protect against cancers. Bananas are high in potassium and B vitamins. All in all a healthy slice of bread that is nutrient dense and yummy !

 

 

 

 

 

 

 

Banana Quinoa Bread

Serves 1 loaf
Dietary Diabetic, Gluten Free, Vegan, Vegetarian

Ingredients

  • 1 cup Oatmeal
  • 1 cup oat flour (oats ground into flour)
  • 1/4 cup quinoa
  • 4 bananas
  • 1/2 cup brown sugar
  • 2 tablespoons coconut oil
  • 2 tablespoons ground flaxseed
  • 1 cup coconut milk
  • 1 teaspoon baking soda

Note

This high protein vegan gluten free bread is loaded with healthy fat and tastes yumm !

Directions

Boil quinoa in 1/2 cup water for 10- 15 minutes to get 1 cup cooked quinoa.
Blend 3 bananas till pureed,
Mix together cooked quinoa, oat flour, dry oats, coconut oil, brown sugar banana puree, ground flax and baking soda. Add coconut milk and beat for a few minutes.
Put mixture into baking dish and top with oats, Cut up one banana and add on top with oats. Bake at 350 degrees for 40 minutes till baked.
