Roasted Cranberry Beet Borscht ( Soup) Shooters

 

 

Cranberries and beets are roasted with ginger, garlic & onions to make this festive Cranberry Beet Borscht bursting with antioxidants & good stuff!  This was a recipe I had planned to share for the last #SundaySupper, but I was not able to post, so I thought I would share it now. Borscht is a soup of Russian origin made primarily of beets and is served hot or cold. Warm beet soup mixed with fresh cranberries and spices make a great appetizer. Greet your guests with a warm soup that they can drink out a mug or glass. This cranberry beet borscht is made of roasted veggies. Roasting intensifies the flavor and makes beets taste better. My recipe is quite simple. Roast all the veggies, blend the veggies , throw it back on the fire, add some spices and a touch of coconut oil and you have a warm spiced cranberry beet borscht that looks and tastes quite festive. Have it for a simple weeknight meal with some warm spice chicken or your next party, either way, it’s sure to be a winner.  The combination of tart cranberries with sharp beets is quite amazing. I added an apple to sweeten it and some celery to give it the some body. Spice this up with some paprika, cayenne, coconut oil and you have an amazing cranberry beet borscht.  Top this with a dollop of fresh cream or Greek yogurt to add some pizazz to the soup!

 

 

 

Nutrition Wise!

Cranberries are packed with vitamin C and are a rich source of dietary flavonoids and other phenolic acids that research has shown may provide a variety of health benefits. They act as antioxidants in the body. Cranberry juice been used for decades for the prevention and treatment of urinary tract infections (UTI). They are said to inhibit bacteria from adhering to the cells that line the bladder. Beets are a “cardiovascular health” friendly root vegetable. Certain unique pigment antioxidants present in root have found to offer protection against coronary artery disease and stroke, lower cholesterol levels in the body and have anti-aging effects. They are also high in vitamin C and are an excellent source of folate. Combine the two together with some potent spices, ginger and coconut oil and you have a borscht bursting with goodness!!

 

 

 

Roasted Cranberry Beet Borscht

Serves 8

Ingredients

  • 4 Small beets
  • 1 cup fresh cranberries
  • 1 Medium apple
  • 1 cup celery (chopped)
  • 1 red onion
  • 4 Pods garlic
  • 2 Tsp ginger
  • 2 Tbsp coconut oil
  • 2 Tsp salt
  • 1-2 Tsp cayenne pepper (or chili powder)
  • 1-2 Tsp paprika
  • 1-2 Tsp pepper
  • 1/2 cup cream (Greek Yogurt)

Note

Use 1-2 tsp of spices as needed. 2 tsps will give you a spicier borscht while 1 tsp will give you a milder borscht.

Directions

Turn oven to 360 degrees. Rub some coconut oil over the beets and cover with foil. Place cut celery, onions, garlic, cranberries and apple in a baking dish and roast along with beets for 30 minutes.
Blend all roasted veggies with ginger till smooth.
Transfer the blended mixture to a dish and place on stove. Add paprika, cayenne, salt, pepper and coconut oil and simmer for 20 minutes.
Garnish with a dollop of cream or Greek yogurt and serve warm

    WOW!!!! The pictures are just amazing. I am feeling like trying this adorable dish right from the laptop screen. Cranberries are my personal favorite and I will make sure to prepare it myself. You have provided the recipe in such a simplistic form that even a person like me who is not that good when it comes to culinary skills, is considering stepping into the kitchen to try this recipe.     • It’s actually quite easy to make. Try it. You may surprise yourself. I never considered my self a great cook ( still don’t) but I like to revamp recipes and make healthy versions, so that’s what I try to do. Thanks for visiting 🙂
